Ahhh… cookie dough. The stuff dreams are made of. I dare you to find me someone who doesn’t appreciate a heaping helping of cookie dough. I’m sure Santa does!

Today’s cookie recipe is one that my family goes absolutely crazy for, and I’m really excited to share it with our FiveStar community. No promises, but if you put these out for Santa this year, he might just leave a few extra gifts under your tree…

Peanut Butter Chocolate Chip Dough Balls

Adapted from Peas & Thank You

Yields about 18-24 cookies

Ingredients

½ cup (1 stick) unsalted butter, softened

1 cup creamy peanut butter

¾ cup confectioner’s sugar

½ cup brown sugar, packed

1 tsp pure vanilla extract

1 Tbsp canola oil

1 ¼ cup flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup chocolate chips

Directions

Mix peanut butter, softened butter, and sugars in mixer until well combined. Add vanilla and oil and mix. In a separate bowl, whisk together flour, baking powder, soda, and salt. While mixing, add dry ingredients to mixing bowl slowly, beating mixture on low speed until dough forms. Stir in chocolate chips. Chill dough for at least 30 minutes.

Preheat the oven to 350°F. Scoop chilled dough onto parchment-lined baking sheet by the tablespoonful. Bake for 10 minutes. Remove baking sheet and let cookies cool on sheet 2 minutes. Transfer to cooling rack to cool fully. Devour.
